I spend a lot of time in the kitchen, my country kitchen as I “affectionately” refer to it…notice the quotations and embrace the sarcasm. I grew up on home cooked food as did my husband and I am a big believer in the importance of knowing what we are eating, so I cook from scratch most of the time. I try to limit processed foods but I am also from an Italian family so cheese, bread and Italian cold cuts are something I’m not willing to go without. Plus the wine, but as they say a glass a day keeps the doctor away, oh right…that’s apples.
In Mandy’s Kitchen posts you’ll find dishes I made. Some are new recipes and some are my old favourites, you know my go-to recipes when I don’t know what else to cook that week. I tend to prepare our meals in bulk so I’m not cooking every day and I freeze what I can. Who really has the time or wants to spend every day in the kitchen? The other reason things need to be ready to go during the week, is because due to our schedules my husband and I take our lunch and dinner to go and eat at work. This way, if we have an evening workout scheduled we aren’t eating a heavy meal too close to bed and we are properly fuelled for the workout.
I hope you find some inspiration in these posts or at least know that cooking from scratch is certainly possible. All you need is some time to prep and of course a lot of love.
